Super Healthy Energy Bites

Chewy energy bites packed full of natural goodness to fuel your day! These are a wonderful little snack, full of nutrients and delicious with a cuppa instead of a biscuit.

Ingredients:

200g  dates
200g cashew nuts
200g raisins / cranberries
¼ teaspoon cinnamon
½ teaspoon natural vanilla
4 tablespoons approx. Sesame seeds/desiccated coconut to decorate

Method:

  • Place all dates, cashew nuts, cranberries / raisins, cinnamon and vanilla in a food processor and pulse several times until finely chopped and starting to form a ball. You might need to use a spatula to scrape down the sides of the bowl.
  • Put sesame seeds / coconut into a bowl and set aside.
  • Wash your hands and leave them wet. Take small pieces of date and nut mix and roll into a ball about the size of two teaspoons of mixture. Roll the bites around in the bowl of sesame / coconut until well covered. Place the bites on a plate or in a jar and put in the fridge to firm up.

These Energy Bites are gluten wheat and dairy free. Children love them and they’re also perfect to pack in your bag when travelling. I made these for the farmers markets and every week we sold out…people adored them.
