If you’re on a keto diet I’m sure you’re probably starting to get a bit tired of your eggs and bacon breakfast. This is the perfect recipe to mix things up at breakfast!
These fluffly, americans style, pancakes are easy and super filling, setting you up for the day.
What you’ll need…(recipe serves 6)
- 50g unsalted butter
- 40g coconut flour
- 4 eggs
- 50 ml cream – make it doubleccream for bonus keto points!
- 1 tsp of vanilla extract
- 1 tsp baking powder
- Butter for frying
- Whipped cream to serve
Method:
Begin by melting the butter. While thats melting, whisk the eggs until they are foamy then add your cream. When the butter has cooled, add it to this mixture along with the vanilla.
Add in the coconut flour and baking powder and stir until it becomes a batter. Let it sit for 5 minutes.
Heat up your pan and add a knob of butter for frying. Pour in desired amount of mixture depending on what size you’d like the pancakes to be.
Get ready to flip!
Then on to the next!
To serve: We recommend whipped cream, berries and a strong cup of coffee!
