Low Carb Coconut Cakes

These gluten free, low carb treats are a must try! Light and fluffy and perfect with a cup of tea.

Let’s get our ingredients ready..

For the cake you’ll need:

  • 5 large eggs & 1 egg white
  • 2 tbsp of erythritol powder
  • 250 ml water
  • 95g coconut flour – available from Amazon UK
  • 2 tsp baking powder
  • tsp vanilla extract

Frosting:

  • 100g unsalted butter
  • 2 tbsp erythritol powder
  • 1 egg yolk
  • Toasted coconut flakes

Preheat your oven to 170 degrees celcius and line your baking tray with tinfoil.

Whisk eggs, egg white and erythritol powder until light and fluffy. and add in vanilla.

In a different bowl mix the cocout flour and baking powder together. Then add this to the other mixture and mix until the lumps are gone.

Pour your batter into your lined dish and bake for 25 minutes.

Let is cool for 30 minutes.

When it has cooled, you can get started on the frosting!

Melt 100g of unsalted butter and add the erythritol. Stir this until the sweetener has dissolved. When this has cooled, whisk in the egg yolk.

Brush this mixture over your cake and sprinkle toasted coconut on top.

Leave your cake in the fridge to set before cutting into portions.
